It's Summer and grills all over are getting fired up for the grilling season. Anybody can make a kabob, just skewer your ingredients and grill, so this week we decided to mix up this classic Summer food. These grilled pineapple and ham kabobs with a brown sugar glaze are a great appetizer or entree with a unique twist for you try out at your next BBQ! Ingredients:
- 1 dozen Wooden skewers
- 1/2 cup Brown sugar
- 1/3 cup Pineapple juice
- ~1/4 tsp. Freshly ground black pepper
- 20 oz. can Pineapple chunks or Freshly cut pineapple (Reserve the pineapple juice)
- 9 oz. Ultra thin sliced honey ham
Directions:
- Roll ham slices and tear each in thirds.
- Strain pineapple chunks, reserving the juice for glaze.
- Mix brown sugar, pineapple juice and black pepper in a small pot over medium heat.
- Bring to a boil then turn down heat to low, constantly stirring so glaze does not burn.
- Heat for a few minutes, then take pot of the burner and set aside.
- Assemble each skewer, starting with pineapple and alternating with ham; each skewer should have four pieces of pineapple and three bunched up pieces of ham. (I personally like a rustic look which is the reason why I used this type of ham.)
- Preheat indoor grilling pan or outdoor barbecue, then spray your cooking surface with nonstick cooking spray.
- Place each skewer on the grill.
- Using a pastry brush, brush on brown sugar glaze, making sure to apply it on both sides of the skewer.
- Grill for 2 minutes on each side or until pineapple gains a caramelized look with lightly browned edges.
- Remove skewers from heat and place onto a serving platter.
Makes 12 skewers.
