Recipe by Chef Misty Rimassa of Elements Tasting Bar & Bistro
Ingredients:
- 12 Oysters, cleaned, shucked (Misty's recommendation: Use Blue Point Oysters)
- Baby spinach, washed and dried
- Alfredo sauce (Recipe for sauce below, store-bought will also work)
- Mozzarella, grated
- Precooked Bacon, finely chopped
Directions:
- Preheat oven to 400 degrees.
- Shuck oysters with an oyster knife or small paring knife.
- Rinse and dry shells.
- Place on baking sheet.
- Add 3-4 leaves of spinach into each shell.
- Replace oyster into shell.
- Cover oysters in Alfredo Sauce.
- Grate mozzarella and place over oysters.
- Top each oyster with bacon pieces.
- Bake at 400 degrees for 12 minutes, or until cheese is golden brown.
- Use tongs or a spatula to remove oysters from baking sheet.
- Serve and enjoy!
To Make Alfredo Sauce:
Ingredients:
- 1 pint Heavy whipping cream
- 1/2 cup Butter
- 1 1/2 cup Freshly grated Parmesan
Directions:
- In a medium saucepan combine all three ingredients.
- Cook over medium-low heat, stirring until smooth.
- Remove from heat, sauce will thicken upon standing.
*If you have extra Alfredo Sauce, use it on your next pasta dish!
