Oyster Rockefeller

Recipe by Chef Misty Rimassa of Elements Tasting Bar & Bistro

Ingredients:

  • 12 Oysters, cleaned, shucked (Misty's recommendation: Use Blue Point Oysters)
  • Baby spinach, washed and dried 
  • Alfredo sauce (Recipe for sauce below, store-bought will also work)
  • Mozzarella, grated
  • Precooked Bacon, finely chopped

Directions:

  • Preheat oven to 400 degrees.
  • Shuck oysters with an oyster knife or small paring knife.
  • Rinse and dry shells.
  • Place on baking sheet.
  • Add 3-4 leaves of spinach into each shell.
  • Replace oyster into shell.
  • Cover oysters in Alfredo Sauce.
  • Grate mozzarella and place over oysters.
  • Top each oyster with bacon pieces.
  • Bake at 400 degrees for 12 minutes, or until cheese is golden brown.
  • Use tongs or a spatula to remove oysters from baking sheet.
  • Serve and enjoy!

To Make Alfredo Sauce:

Ingredients:

  • 1 pint Heavy whipping cream
  • 1/2 cup Butter
  • 1 1/2 cup Freshly grated Parmesan

Directions:

  • In a medium saucepan combine all three ingredients.
  • Cook over medium-low heat, stirring until smooth.
  • Remove from heat, sauce will thicken upon standing.

*If you have extra Alfredo Sauce, use it on your next pasta dish!
