Who doesn’t like ice cream? Here’s my dairy free yet it is so creamy the texture is like a double churn ice cream. It even fools distinguished palates. Never letting bananas go to waste this is another go to recipe and dessert that’s healthy and so easy to make. You could omit the spices and just make plain Banana ice cream if you desire. Enjoy!
Ingredients:
5 Ripe Bananas, sliced and frozen
1/4 cup fresh squeezed Lemon
1 Tsp. ground Cinnamon
1/4 Tsp. ground Cardamom
1/4 Tsp.ground Ginger
Optional Flavor Ideas: Peanut Butter, Strawberrys, Blueberry, Vanilla Bean ….
Directions:
Prepare a tray with parchment paper. Slice bananas, put banana slices on the tray in a single layer, place in freezer for at least 2 hours or until completely frozen.
In a food processor put frozen banana slices and start pulsing, add lemon juice, keep pulsing, use spatula to scrape sides and break up the bananas. Let the food processor now run until smooth adding in your cardamom, cinnamon and ginger. Keep blending until completely smooth.
Prepare a 9x5 Loaf pan with parchment paper.
Scoop the banana ice cream mixture in the loaf pan, cover with plastic wrap and freeze for at least 4 hours before scooping and serving. Enjoy!
Note: Get creative and mix in ingredients for a variety of different flavors or just make it plain adding a cookie or fruit on top.
