My husband, Nick, and I attended a neighborhood social at the residence of Briggs and Lisa Latham. It was a beautiful sunny day, and the views were spectacular. Everyone who attended brought an appetizer and cookies to share. I brought my nussecken, a german cookie pastry, and my fig and goat cheese tartines. Everyone brought delicious esculents. Lisa made a variety of goodies; when I asked if she would be willing to share any of her recipes, Lisa picked up her no- bake cookies, later letting me know that these cookies are very special. They were her son Steven’s favorite cookie, and she made them for his celebration of life event. Lisa shared that her Aunt Carolyn gave her this recipe over 30 years ago. The recipe is widely available on the internet. Lisa shares, “This recipe can be adjusted with a little less sugar, and a little less oatmeal to make them more moist.” Enjoy!
Ingredients:
1 stick of butter
1/2 cup cocoa, unsweetened
1 cup sugar
1/2 cup milk
1 tsp vanilla
1/2 cup peanut butter, Lisa prefers extra crunchy (can use smooth)
3 cups rolled oats
Directions:
Bring first 4 ingredients to boil. Boil 1 minute.
Add 1 tsp vanilla, 1/2 cup peanut butter.
Add 3 cups of rolled oats.
Mix ingredients, Drop by teaspoon onto wax paper. Cool completely.
Yields 28 cookies
