Here’s a delicious and simple pasta dish that is super tasty and great to serve hot or cold. It’s light and bright making your palate happy. Adding more of the lemon zest to the finish makes it even more mouth watering. Enjoy!
Ingredients:
Make 16 ounce of pasta, follow package directions and set aside.
3 Tablespoons Olive Oil
2 Tablespoons minced Garlic
1 teaspoon Anchovy Paste, to taste
1 Teaspoon Red Pepper Flakes, add more to taste
2 cans Albacore Wild Tuna, Wild Planet 5 oz cans
1 cup Chicken Broth
5 tablespoon fresh squeezed Lemon Juice
3 Tablespoons Lemon Zest
Black Pepper, to taste.
Optional: 2 Tbl Butter
Hand full of Arugula
Optional: Shaved parmesan, to top
Directions:
In a large pan over medium heat add olive oil, garlic, anchovy paste and red pepper flakes.
Break up tuna and add to pan, stirring.
Add chicken broth, lemon juice, zest & black pepper add optional the butter.
Add arugula gently mixing in right before serving.
Garnish with thinly sliced lemon and add more chopped arugula.
Serve family style or individually. Enjoy!
