My granola is a healthy and a great alternative to eat if you have a craving for something sweet. Eat anytime of the day, get creative and make a parfait by layering it in between your favorite yogurt and fresh fruit. So delicious and Simple!
Ingredients:
Preheat oven 300 degree
- 8 cups rolled Oats ( do not use instant)
- 2 cups chopped Walnuts
- 1 cup chopped Almonds
- 1 cup chopped Pecans
- 1 1/2 cups dried Cranberries
- 2 cups dried Date Nuggets
- 3/4 cup melted virgin Coconut Oil
- 1 teaspoon ground Cinnamon
- 1 teaspoon Sea Salt
- 3/4 cup Maple Syrup
- 1 tablespoon Vanilla
- 1/2 cup Honey
- optional: toasted Coconut Flakes
Directions:
- Line 2 baking sheets with foil
- In a large bowl mix oats, nuts, cinnamon, salt, coconut oil, maple syrup and vanilla
- Reserving cranberries, date nugget and coconut flakes
- Spread mixture evenly on baking sheets
- Bake for 1 hour tossing mixture every 15 minutes
- Add cranberries, date nuggets still reserving coconut flakes
- Drizzle honey evenly on mixture and toss, bake another 30 minutes toss in 15 minutes
- Turn off oven, keeping granola in oven while cooling completely
- Pour in large bowl then add coconut flakes
- Store in airtight container, keeps 2 months or longer
