What You Will Need:
- Aluminum foil
- Non-stick cooking spray
- Baking tray
- Avocado, ½ per person, pitted
- Eggs, one per person
- Your favorite seasonings
- Optional: Parmesan cheese
Instructions:
- Preheat oven to 450℉.
- Line baking sheet with foil and spray with non-stick cooking spray.
- Cut avocado in half, remove pit and discard.
- Crack egg and place into center of avocado. Some of the egg will overflow if it is too big, so use the appropriate sized egg for your avocado.
- Season egg with your favorite seasonings; I like to use freshly ground black pepper, a dash of cayenne pepper and a sprinkle of Parmesan cheese.
- Bake the Eggocado for 15-18 minutes, or until the egg is set.
- Serve immediately with your favorite fruit and toast on the side.
I tested the Eggocado both hot and cold and it was incredibly tasty either way, so give it a shot!
